Funfetti No-Bake Cheesecake


I ORGINALLY saw this recipe float around Facebook last year, However the recipe called for a store bought crust. I'm not a fan of pre-made graham cracker crusts. You can choose to buy one or make your own. I personally think this tastes better with a homemade crust.

I highly recommend you read the instructions closely, I accidentally added in a whole bag of Funfetti cake mix when the recipe didn't call for it. With four kids I am constantly tired and running behind, I was super tired the day I made this. However, regardless it turned out extremely thick and still fine. It was more of a cookie dough texture and tasted similar to cookie dough.

I highly recommend this recipe when made the right way. Below is the recipe to make this fun cheesecake. You also can use other cake mix if you prefer!


INGREDIENTS

  • 1 1/2 c. heavy cream
  • 12 oz. cream cheese, softened
  • 1/2 c. sugar
  • 1 c. birthday cake mix THATS 1 CUP NOT 1 BAG. 
  • 1 sleeve of graham crackers, 1/2 cup of butter, and 2 tsp of sugar
  • Rainbow sprinkles, for decorating

DIRECTIONS

    Place graham crackers in a food processor until there is fine crumbs. Place butter in microwave until melted. Add graham crackers to pie pan, mix in sugar and melted butter. Pat down into pan. Refrigerate 

  1. In a large bowl using an electric hand mixer, whip heavy cream until soft peaks form. More of a whipped cream texture that creates peaks.
  2. Add softened cream cheese (let it sit out until it reaches room temp) and sugar and stir until completely combined and no clumps remain.
  3. Fold in birthday cake mix.
  4. Pour mixture into prepared pie crust, smoothing over top with a rubber spatula. Top with sprinkles, cover with plastic wrap, and refrigerate until firm, at least 6 hours.

Well it seems there's a very good reason why it's called "FUNfetti"! This recipe looks like summertime fun to me. For a birthday or other celebration, I might want to go even MORE all-out and add some of those brightly colored birthday candles with the white dots on them! And as for adding the whole bag of cake mix-- we've all been there. :)
